Why we roast and how we got into it
Last year our journey through the wondrous world of coffee brought us to a place where (with shaky hands) we asked ourselves whether or not it was time to purchase our own roaster. The risks were high with the price of roasters often well exceeding ten grand and no real promises of success, but the potential rewards proved in our eyes, to be worthwhile.
We decided that for the sake of fully diving into the creation of coffees that were truly our own, buying a roaster would be well worth the risk. Plenty of adventures have since ensued and thanks to a combination of passion, gutsiness, gumption and knowledge, we turned out some great coffees right from the start. Our excitement built and continues to build as we imagine blends for a perfect house espresso or as we discuss the possibilities of experimentation with unorthodox roast profiles for coffees from various regions worldwide.
Roasting has given us much more control over what regions, farms and even micro-lots we choose to purchase our green coffees from. It has helped us to grow a more intimate knowledge of the farming, harvesting, and early processing stages of coffee and allowed us to begin developing relationships with farmers, importers and other roasters alike.
So far roasting for ourselves has proved to be rewarding in every aspect. Being able to stamp our name on a bag of delicious specialty grade coffee often on par with that of our heroes has made us smile from ear to ear and has helped us to serve drinks that are truly our own. We hope to continue growing as a company that roasts so we can wholesale and share our new coffees with shops and customers outside of our area as well as in shop here in Redlands. We also want to grow in our ability to support fair commerce bettering the lives of farmers we work with while providing our friends and customers with the best coffee's possible.
